Almond cookies 杏仁酥餅

這是参考了網上 Mrs P 的做法,個人作了些微的改變。

This is from the recipe of Mrs P’s, and as always I have made a few changes.


Butter 100g

Brown sugar 40g

Half egg beaten

Plain flour 150g

Almond flour 50g

Almond butter 20g

Baking soda 2g

Baking powder 2g

Pinch of sea salt

Vodka vanilla 5ml

Some whole almonds


Sift the flour, baking soda and baking powder into a mixing bowl.

Add butter and rub together until the texture resembles fine breadcrumbs.

Add pinch of salt, almond flour, sugar into the flour mixture, mix well.

Make a well in the centre, add the almond butter, vodka vanilla and a bit of egg.(save some as egg wash for the top)

Then knead gently until the dough comes together.

Preheat the oven 170C

Place a piece of baking paper on a baking tray.

Divide the dough into small bits, around 22g. Roll each into a ball and flatten to about 1/4 inch thick. Place on the baking paper, leave some space between each cookie.

Press one almond in the middle of each cookie, brush the top of the cookies and almonds with the remaining egg.

Baked for 20-25 minutes or until lightly brown.

Transfer to a wire rack to cool.
