Dark Chocolate Caramel Shortbread

焦糖黑朱古力餅,傳統西方甜食,配茶或咖啡就最合適。

Ingredients and Equipment

A baking tray (12″ x 7″).

The Shortbread

  • 150g of plain flour.
  • 50g of self raising flour.
  • 25g of rice flour.
  • A pinch of salt.
  • 130g of butter.
  • 70g of sugar.

The Caramel

  • 120g of butter
  • 75g of brown sugar
  • 397g can of condensed milk
  • 30g of honey
  • Some coarse sea salt

温韾提示:做人一定要有尊嚴,做這款餅一定要記住樽盐!

The dark chocolate topping

  • 300g of dark chocolate

Method

1.  Preheat the oven to 170C.

2. Mix the flour (sifted), sugar and a pinch of salt

3. Cut butter into small bits

4. Mix the butter with the flour mixture and rub until the texture resembles fine breadcrumbs.

5. Press the mixture into the base of the tin. Prick the shortbread lightly with a fork and chill for 10 minutes. Bake for 15 to 17 minutes. Leave to cool in the tin.

6.  To make the caramel, place the butter ( cut into small pieces) , brown sugar, honey and condensed milk in a pan using medium heat, then low heat for about 7 to 8 minutes or until the mixture has thickened slightly.  Pour over the shortbread and leave to cool.  Add small amount of coarse sea salt on top of the caramel.

7. Break the dark chocolate into small pieces and melt it in a bowl inside the oven using the residual heat. It takes a few minutes depending on the temperature of the oven.

8. Pour the melted chocolate over the caramel and leave to set. Cut into squares and ready to serve.

人面桃花

年少的我跟鄰居那位太太非常的投緣,多年來每次走近她門前,都一定要與她寒暄一大遍才覺滿足。 她最愛告訴她自己家庭的故事,她有著無限的驕傲。她出身大户人家,飽讀詩書,話說當年解放前過的是大富大貴的日子,她出嫁的那天用了很多很多她喜歡白色的花,深深地懷緬著美好的時光,我聽了也很高興。還有她的兒子和孫子們的生活點滴,全都是動聽又有趣的故事,我每次都聽到津津有味。她就像一本書,我無須花心機去翻任何一頁,她可以精彩的一一向我道出,最合我這與書本無緣的懶蟲,從中又獲益良多,所以對她欣賞又感激。她又十分喜歡分享兒子及孫子們的照片,非常温馨的一大家人,我覺得這就是美滿和幸福的人生,我也被感染了些快樂。 近這幾年,她住所已搬進了其他人,打聽之下才知道,她先生過身後幾年她也走了。如今每次步近那門口,感覺有㸃傷感和失落,人怎麼這樣快就没有了?! 最後見她的一回,她先生已歸麈土,她滿是依依不捨,對我嘆道,“人生苦短!” 我應該說㸃安慰的說話,但我却道,“人生是短啊,但苦却是不短的,只怕快樂才是人生最短缺的。” 我說完才覺得我老實得來又中肯,說得過份又再添加㸃㸃的傷感,就是萬分的不該。 記起她種的桃花,及她對我吟的詩: 去年今日此門中,人面桃花相影紅; 人面不知何處去,桃花依舊笑春風。 歲月就是最無情的,更添加傷悲的是,現今的我,與她還未好好道别,一直以為有很多再見的機會,空嘆桃花與人面都消失了。 往事並不如煙…夢裡他們兩夫婦還是住在舊居,但影像却是濛濃的,感覺有些苦澀。渴望可以有一個機會到他們墓前寒暄片刻,這就會是我們最完美的終結。 如今我却明白到快樂也不一定是短暫的,只要你不忘那些故人,每一天開心地面對,你就會有著長久的快樂了!   你好,大家好。我是周到,孩子都叫我姑姑,姑姑太動聽了! 對我的糊言亂語與錯字,真不要太認真,事實這就是我的水平,我接受了,所以我很快樂! 台灣插畫家[人2]

很喜歡人2的插畫及其風趣幽默的特色,在此要向他寫一篇短文。

文人與藝術家需要的是創作力,創作力是原動於無窮無盡的幻想,幻想比現實美麗得多,現實很多時令人變得非常沮喪,所以人就把最美好的都幻想出來了,起碼精神上是快樂的。

其實精神上多些快樂是非常重要的,這樣人才可以好好的生活下去,可以正面的面對工作,有著和諧的人際關係。

人2的作品往往將對現實的不滿很諷刺的展示給粉絲,廣闊地把歡樂在世上傳播,令我十分感動。

最可笑和令我不相信的是他没有女友,他的插圖每每藏著“徵女友”三字,文人通常是大話連篇的,所以我懷疑這是他的創作特色和噱頭。就如我的文章中會出現的“他”,創作世界是很令人著迷的。

世間事就是真假,錯對難分。

請不必太認真。

The Ultimate Flourless Chocolate Roulade

I learned to make this roulade from Mary Berry’s website, I have made a few changes because I am always a bit rebellious.

 

Ingredients

  • 175g of dark chocolate of your choice, melted
  • 6 large eggs, separated
  • 120g of sugar
  • 30g of raw cacao powder
  • A few drops of white vinegar
  • A pinch of sea salt
  • 300ml of double cream and a table spoon of vodka vanilla
  • Icing sugar, to dust.

Method

  1. Preheat oven to 160C
  2. Place a sheet of greaseproof paper in a swiss roll tin(13″ x 9″)
  3. Add the sea salt and 30g of the sugar in the melted chocolate, then egg yolks. Mix until combined
  4. Whisk the egg  whites for a few seconds, add a few drops of white vinegar, then gradually adding the rest of the sugar. Continue whipping to stiff peaks.
  5. Fold one third of the egg whites into the chocolate mixture, then quickly and gently mix the rest together.
  6. Sift the raw cacao powder into the mixture, lightly fold it in.
  7. Pour the mixture in the tin and bake for 18-20 minutes.
  8.  Remove from oven, leave to cool in tin. Cover with a dry tea towel.
  9. Whip the cream until thick, add a table spoon of vodka vanilla. Whip for a few more seconds.
  10.  Turn the roulade out on to a greaseproof paper, peel off the backing paper, spread the cream evenly on and roll it up.
  11.  Chill for a couple of hours and ready to serve.
